Brown farfalle with prawns, oyster mushrooms and broccoli florets

Serves: 2

Ingredients

  • 180g brown pasta (Misura)
  • 10 king prawns
  • 1 tbsp fresh thyme
  • 150g oyster mushrooms
  • 80g broccoli fresh
  • 4 tbsp olive oil
  • 2 cloves garlic
  • 6 cherry tomatoes

Method

Peel the prawns and dice, slice the mushrooms, cut the broccoli in small florets, chop the garlic and quarter the tomatoes. Place all the ingredients in a small oven tray drizzle with olive oil and grill in the oven until browned. Meanwhile boil the pasta and toss with the other ingredients once roasted.
