Trio of skewers with a chilli and chive yogurt dip and pitta bread

Serves:

Ingredients

Honey and sesame beef

  • 300g beef filet, cut into strips
  • 1 tbsp honey
  • 2 tbsp sesame oil
  • 1 tbsp sesame seeds
  • 1tsp chopped fresh parsley

Red curry paste chicken

  • 300g chicken breast, cut into strips
  • 1 tbsp red curry paste
  • 2 tbsp olive oil
  • 1 chopped spring onion
  • 1 tbsp wild thyme

Ginger and Dijon mustard lamb

  • 2 lamb fillets, cut into strips
  • 1 tsp chopped fresh ginger
  • 1 tbsp Dijon mustard
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp chopped fresh coriander

Yogurt dip with pitta bread

  • 200g Greek yogurt
  • 1/2 tsp chopped red chillies
  • 1 tsp chopped chives
  • Cracked black pepper
 

Method

For the skewers

Rub the ingredients onto the lamb/beef or chicken then thread onto 5 skewers. Allow to marinate for an hour, then grill to your liking.

For the yogurt dip with pitta bread

Mix all the ingredients together and keep in the fridge to chill before serving with warmed pitta bread and the cooked skewers.
