Chocolate and orange puddings

Ingredients

  • 3 whole eggs
  • 3 egg yolks
  • 190g caster sugar (Lamb Brand)
  • 75g plain flour (Lamb Brand)
  • 150g mayonnaise (Hellmans Real)
  • 150g dark chocolate
  • Finely grated zest of 2 oranges
  • 2 tbsp orange liqueur
  • You will also need melted butter and extra cocoa powder for the moulds

Method

Preheat the oven to 180C. Line your fondant moulds with butter and cocoa powder and put in the fridge to set the butter. Next, whisk the eggs, yolks and sugar in a large bowl until fluffy. Melt the chocolate in a bowl over hot water. Carefully fold the flour into the egg mixture, followed by the mayonnaise, orange zest and the melted chocolate. Fill the moulds with the fondant mix and bake for 10-15 minutes until set. Allow to rest a few minutes, remove from the moulds and place onto your serving plates. Pour over the orange liqueur and dust with extra cocoa powder before serving.
