Scallops with cheese sauce
Ingredients
- 4 fresh scallops
- 50g baby spinach
- 100ml milk
- 30g Cheddar cheese
- 30g Parmeggiano
- Pinch of nutmeg
- 1 tbsp corn flour
- Knob of butter
- 1 tbsp chopped fresh dill
Method
Saute’ the spinach with some olive oil and season to taste. Wash well the scallops and take out from their shell, make sure there is no sand. Prepare the cheese sauce by melting the butter, than add the corn flour to form dough, add gradually the pre heated milk. Add the nutmeg salt, pepper and dill, reduce heat and add the shredded cheeses. Place some of the spinach on each shell, than the scallop meat and cover with the cheese sauce. Bake in 180C oven for 15 minutes on the top shelf.
