Spaghetti with spicy lamb, roasted rosemary onions and pistachios

Ingredients

  • 400g spaghetti (De Cecco)
  • 2 onions
  • 1 tbsp fresh rosemary
  • 2 tbsp olive oil
  • 3 cloves garlic
  • 150g lamb mince
  • 3 tbsp pistachios (Lamb Brand)
  • ½ tsp mixed spice
  • 100g whole tinned tomatoes (Mutti)
  • ¼ glass red wine

Method

Cut the onions in quarters, mix with the rosemary, crushed garlic,olive oil and roast until browned. Than using a preheated pan add the roasted vegetables, spices and lamb. Mix well until mince is completley cooked and pour in wine, reduce and mix in tomatoes, simmer until thickened and add the pistachios. Cook the pasta al-dente and than simmer for 2 minutes in the sauce and serve.
