Stuffed fillet of pork with a pomgrenate and pistachio stuffing

Serves:

Ingredients

  • 1 pork fillet
  • 1/2 Maltese sausage
  • 3 tbsp pomgrenate kernels
  • 2 tbsp peeled pistachios (Lamb Brand)
  • ½ red onion
  • 1 knob butter
  • ½ glass red wine
  • 1 tbsp balsamic vinegar
  • 1 tbsp sugar

You will also need

  • 8 new potatoes
  • 2 tsp chopped fresh rosemary
  • 1 tsp sweet paprika
  • 2 cougettes

Method

Crush roughly the pistachios and mix with the maltese sausage and pomgrante, open lenghtwise and flatten the pork fillet, put the mixture in the middle and roll tightly. Roll agian in silver foil and roast at 180`c. Melt the butter and cook the onion with the sugar until browned, add the red wine and vinegar and reduce by half. Cut the new potatoes in half and toss in same olive oil salt, pepper, papprika and rosemary, place in small oven dish and bake until nicely browned. Cut the courgettes in thin lenghtwise slices and grill on a griddle pan.
