Beef rib eye with caramelized onions
Ingredients
- 200g beef rib eye
- 1 onion
- 2 potatoes
- 50g pumpkin
- 100ml beef stock
- 100ml red wine
Method
Marinate the rib eye with sea salt, fresh ground pepper, 1 teaspoon olive oil and some dark soy sauce marinate for 5 minutes. Meanwhile, prepare a boiling pot and cook the potatoes and pumpkin together for 10 minutes. Drain and set aside with a knob of butter. Next, preheat another pan and shallow fry the onions until golden brown. Pour in the red wine and reduce for 10 minutes before pouring in the beef stock and reduce to a thick consistency. Meanwhile, cook the marinated rib eye on a grill for 5 minutes on each side. Serve together with the potatoes and the caramelized onion.
