Salmon Ravioli with a cider and lime dressing
Ingredients
- 12 salmon ravioli (Variety foods)
- ½ onion chopped
- 3 cloves garlic chopped
- 1 tsp fresh thyme leaves
- 2 tbsp olive oil
- ½ glass apple cider
- ½ tsp lime zest
- Bunch rocket leaves
- Ground fresh pepper
Method
In olive oil fry lightly the onions and garlic without colouring, add the lime zest and thyme stirring continuously. Pour in the cider and simmer until reduced by half, now toss in the cooked ravioli and serve with rocket leaves and fresh grinded pepper.
Suggested wine: Woodbridge Chardonnay
A well-made Chardonnay which is fresh but with buttery, vanilla overtones from time spent in French and American oak. It has lots of tropical fruit, lemon and lime character to give just the right amount of balance. A fine example of what good Californian Chardonnay is all about.
