Pasta with blue cheese and leeks
Serves:
Ingredients
- 10g blue cheese
- 100g leeks, chopped
- 1 onion, chopped
- 2 cloves garlic, chopped
- 50ml cream
- 100ml vegetable stock
- Salt and pepper
Method
Preheat a pan and sauté together the onions, garlic and leeks with a little olive oil until golden in colour. Add the vegetable stock and reduce by half, before finally adding in the cream and blue cheese to thicken the sauce. Boil pasta for 7 minutes, drain and mix in with the prepared sauce and serve.
