Lobster and grapefruit salad
Serves:
Ingredients
- 1 lobster
- 1 grapefruit
- Spring onions
- Coriander
- Juice of 1/2 lemon
- Olive oil
- Salt and pepper
- 5 cherry tomatoes
- 1 celery
- 1/2 tbsp ginger (finely chopped)
- Zest of a lime
- Spinach leaves
Method
Start by cooking the lobster for 5 minutes in boiling water, then cut in half and take out the flesh. Chop it, but leave the claws at the side. Cut the grapefruit into segments, chop the ginger, spring onions, coriander, celery, and cherry tomatoes. Put all these ingredients together with the lemon juice, lime zest, olive oil, salt and pepper in a bowl and toss. Add the spinach just before serving, and place the claws on the salad.
