Pan-fried salmon with dill and olive butter
Ingredients
- 2 salmon fillets x 200g
- 50g salted butter
- 1 clove garlic
- 3 black olives
- 1 tsp chopped dill
- 6 new potatoes
- 1 tbsp chopped rosemary
- ½ onion
- ¼ aubergine
- ½ yellow pepper
- 2 ripe tomatoes
- Bunch rocket
Method
In a hot preheated pan, sear the salmon presentation side first and remove from heat. Toss the potatoes in some oil and rosemary and roast in the oven at 180`c. Blend the garlic, olives and dill until finely chopped than add the butter than blend in salted butter, roll in clinc film and put in fridge for 2 minutes. Cut the onions aubergines and yellow peppers in chunky peaces and cook on high heat until browned , add chopped tomatoes and remove from heat. Finish the salmon in the oven and serve on the roasted veg and caponata and with a slice on butter on top. Garnish with rocket leaves.
