Spaghetti with prawns and shellfish al cartoccio
Ingredients
- 1 shallot
- 2 cloves garlic
- Mixed shellfish
- Peeled prawns, fresh prawns and scampi
- Chopped fresh herbs
- Cherry tomatoes
- White wine
- Tomato sauce
- 1 packet long pasta (Pasta Zara)
- Olive oil
- Silver foil or baking paper
- Fresh red chili
Method
Peel the shallot and garlic, finely chop them. Shallow fry them in olive oil until soft, stir in the shell fish and the prawns mixture. Sprinkle with the herbs, chili, salt and pepper. Splash with the white wine and allow to evaporate. Discard of any closed shell fish and top u with the tomato sauce. Cook the pasta and stir in the sauce. Toss the pasta well to bind with the sauce. Cut a large square of foil or baking paper. Place a portion of pasta in the centre of the sheet, sprinkle with a few more herbs and drizzle with olive oil and wrap tightly.
