Melon and shrimp salad

Ingredients

  • 1 small cantaloupe melon
  • 50g blanched shrimps
  • 20g mayonnaise
  • 1 tbsp dill
  • 1 tbsp port wine
  • 1 clove garlic
  • A squeeze fresh lemon juice

Method

Cut the melon in half, clean and scoop melon flesh using either a melon baller or spoon and keep the halved melon skin. In a bowl mix together mayo, port, dill, garlic, lemon juice, salt and pepper. Add shrimps and melon flesh to mayo and port mix and stir well. Serve the shrimp and melon mixture in the melon skin.
