Rack of lamb with crushed sweet potato and wild thyme Marsala reduction
Ingredients
- 1 rack of lamb
- 1 large sweet potato
- Knob salted butter
- 1 clove garlic
- 8 oyster mushrooms
- 1 tbsp wild thyme leaves
- 1 tortilla wrap
- ½ cup marsala wine
- ½ cup lamb stock
- 2 cherry tomatoes
- 2 broccoli florets
Method
Dice the sweet potato overcook, crush with the salted butter and season. In a saute pan seal the lamb cut in 2 eqaul pcs from all sides and finish in the oven for 9 minutes at 180`c. In the same pan add some salted butter thyme, and crushed garlic, saute and add the marsala,stock and reduce on low heat. Cut the tortillas in long thin traingles and fry on a saute pan to garnish. Add some rosemary infused oil to the oyster mushrooms and cherry tomato than cook until softened in the oven. Blach the broccoli florets and season with salt and pepper.
