Scallops on coloured peppers and mangetout with orange and lemon juice dressing

Ingredients

  • 4 scallops
  • 1 tbsp olive oil
  • Mixed peppers
  • Mangetout
  • 1 orange and lemon, segmented
  • Juice of a lemon and orange
  • 2 tbsp honey

 

Method

Pan-fry 4 scallops in a hot pan with some olive oil for 4 minutes. Meanwhile, prepare a fancy salad with coloured peepers, mangetout, orange and lemon segments. To make the dressing, squeeze the lemon and orange juice and reduce in a pan and a touch of honey until thick.
