Warm chicken salad Waldorf style

Ingredients

  • 1 boneless, skinless chicken breast
  • 2 tbsp white vinegar
  • Few pepper corns
  • 2 bay leaves
  • 1 red apple
  • 1 stick celery
  • 1 lime
  • 200g black grapes
  • 2 tbsp natural yoghurt
  • 100g toasted walnuts
  • Finely chopped parsley
  • Fancy salad leaves for serving

Method

Bring a large saucepan filled with water to simmering point on a low heat, then add the vinegar, pepper corns, bay leaves and chicken breast. Gently poach the chicken until cooked through. Cut the apple in quarters and slice thinly, chop the celery stick and cut the grapes in half. Combine these ingredients together in a large mixing bowl, along with the lime juice. Slice the chicken breast finely and add to the above ingredients; bind together with the walnuts, crème frais and chopped parsley. Serve warm accompanied with nice crispy salad leaves. Suggested accompanying wine: DELICATA Medina Rose Grenache D.O.K. Malta
