Beef ‘straccetti’ with almonds and rucola

Ingredients

  • 400g beef steak
  • 2 cloves garlic
  • Few rosemary sprigs
  • 100g blanched almonds
  • 1 hand full rucola leaves
  • 2 tbsp white balsamic vinegar
  • 1 tsp sugar
  • 1 tbsp extra virgin olive oil (PREGO)
  • Fresh seasoning

Method

To prepare this recipe you need a tender cut of meat, since ‘Straccetti’ means thin strips and therefore the idea is to quickly cook the meat flavored with the aroma of the garlic and the herbs. Take a nice thick steak and cut thinly into strips with a sharp knife. Heat a thick bottom frying pan with a little olive oil, together with the garlic, cloves and rosemary sprigs. Add in the beef strips as soon as the oil starts smoking and is nice and hot. Quickly sear the meat and season well with salt and pepper. Stir in the almonds. Sprinkle with balsamic vinegar, sugar and a couple of spoons of water. Serve the cooked meat and the almonds on the rocket leaves and dress with the pan juices.
