Grilled chicken with brie and walnuts, drizzled with honey and mustard dressing

Ingredients

  • 2 chicken breasts, each cut into 2 fillets
  • 1 round brie cheese, sliced into 8 pieces
  • 1 ripe pear, sliced
  • 50g walnuts
  • Mixed salad leaves
  • 1 tbsp olive oil

For the dressing

  • 1 tbsp French mustard
  • 1 tbsp honey
  • 1 tbsp balsamic vinegar
  • 1 tbsp cider vinegar
  • 4 tbsp olive oil
  • 1 clove garlic, crushed
  • Fresh seasoning

Method

Make the dressing by putting all the ingredients into a processor and blitz for 15 seconds. Pour the dressing into a bowl and put to one side. Next, heat the oil in a griddle pan, season the chicken fillets with pepper and salt, and cook on both sides till golden brown. Place the brie slices on top of the chicken fillets and place the pan under the grill to melt the brie. Meanwhile, put the salad together by mixing the salad leaves, walnuts, and pear slices with half the prepared dressing together in a large bowl. Divide the salad into 2 serving plates and place the chicken fillets on top. Finally, drizzle with the remaining dressing and serve.

  • 1 ġobna tonda tal-brie mqattgħa fi 8 biċċiet
  • 1 lanġasa misjura mqattgħa
  • 50g ġewż
  • weraq imħallat tal-insalata
  • 1 mgħarfa żejt taż-żebbuġa

Għat-taħlita tal-wiċċ

  • 1 mgħarfa mustarda Franċiża
  • 1 mgħarfa għasel
  • 1 mgħarfa ħall balsamiku
  • 1 mgħarfa ħall taċ-ċidru
  • 4 mgħaref żejt taż-żebbuġa
  • 1 sinna tewm mgħaffġa
  • ħwawar friski

Method

Agħmel it-taħlita tal-wiċċ billi tpoġġi l-ingredjenti kollha f’food processor u ħawwad għal 15-il sekonda. Itfa’ t-taħlita fi skutella u warrab f’ġenb. Imbagħad, saħħan iż-żejt fuq grilja, ħawwar il-biċċiet tat-tiġieġ u sajjarhom fuq iż-żewġ naħat sakemm jiħmaru. Poġġi l-biċċiet tal-ġobon brie fil-wiċċ u daħħal ftit fil-forn sakemm l-ikel jiħmar mill-wiċċ. Sadattant, ħejji l-insalata billi tħallat flimkien il-weraq tal-ħass, il-ġewż u l-biċċiet tal-lanġasa flimkien ma’ nofs it-taħlita li tkun ħejjejt. Poġġi l-insalata fil-platti li tkun se sservi fihom u żid il-biċċiet tat-tiġieġ fil-wiċċ. Fl-aħħar, itfa’ t-taħlita li jkun fadal u servi.
