Salmon and ginger fishcakes with sweet potato wedges

Ingredients

  • 450g salmon steaks, skin and bones removed
  • ½ chilli, finely chopped
  • 2 spring onions, chopped
  • 1 large piece ginger, grated
  • 1 egg, beaten
  • fresh seasoning
  • 1 large sweet potato
  • 3 tbsp olive oil
  • chilli sauce for serving
 

Method

Start by scrubbing the sweet potato to remove any dirt. Cut it up into thick wedges, and place onto a greased baking sheet. Drizzle with 1 tbsp of olive oil and bake in the oven at 200`c for 20 minutes, or until the potato chips are cooked through. Alternatively you can deep fry the chips till golden brown. Cut the salmon into chunks and poach for a few minutes in boiling water till almost cooked. Drain away the water and leave the salmon to cool. Place the salmon, spring onions, ginger, chilli, beaten egg and seasoning together in a bowl and mix well to form a soft paste. Divide the mixture into small patties. Heat the remaining oil in a large pan and fry the salmon patties on both side for a few minutes till golden brown. Serve the salmon fishcakes with the sweet potato wedges and chilli dipping sauce on the side.

Ingredients

  • 450g salamun mingħajr ġilda u xewk
  • ½ bżaru aħmar (filfel) imqatta’ fin
  • 2 basliet twal (spring onions) imqattgħa
  • 1 biċċa ġinġer kbira maħkuka
  • 1 bajda mħabbta
  • bżar u melħ
  • 1 patata ħelwa kbira
  • żejt taz-zebbuga
  • zalza tal-filfel biex isservi

Method

Ibda billi tnaddaf il-patata ħelwa. Qattagħha f’biċċiet ħoxnin għaċ-chips u poġġiha fuq tilar midluk biż-żejt. Ferrex iż-żejt taż-żebbuġa fuq il-patata u sajjarha fil-forn f’temperatura ta’ 200oC sakemm issir minn ġewwa. Tista’ wkoll taqliha sakemm tieħu kulur dehbi. Qatta’ s-salamun f’biċċiet pjuttost kbar u għallihom għal ftit minuti sakemm ikunu kważi saru minn ġewwa. Qattarhom mill-ilma u ħallihom jiksħu. Poġġi s-salamun, il-basal, il-ġinġer, il-filfel, il-bajda mħabbta u l-ħwawar fi skutella u ħawwadhom sakemm tifforma taħlita ratba. Qassam it-taħlita f’pulpetti żgħar u aqli f’taġen jaħraq bi ftit żejt sakemm jieħdu lewn dehbi fuq iż-żewġ naħat. Servi l-pulpetti tas-salamun maċ-chips tal-patata ħelwa u z-zalza tal-filfel.
