Pan-fried halloumi cheese with lime, caper and coriander dressing
Serves: 2
Ingredients
- 1 packet halloumi cheese
- 3 tbsp well-seasoned plain flour
- 2 tbsp Olive oil
For the dressing
- 2 tbsp olive oil
- Juice of a lime
- 1 clove garlic, crushed
- 1 shallot, finely chopped
- 1 tbsp balsamic vinegar
- 1 tbsp chopped coriander
- 1 tbsp capers
- fresh seasoning
Method
This recipe is extremely simple and can be made in just a few minutes. This dish is ideal served as a starter. To make the dressing, just mix all the ingredients together and leave to chill while you prepare the halloumi cheese. Take the block of halloumi cheese, and slice horizontally into 4 or 5 slices. Take each piece, and coat all over with the seasoned flour. Heat the olive oil in a large, non-stick frying pan, and quickly fry the halloumi cheese on both sides till golden brown. Place the pan-fried halloumi cheese onto a large serving plate and drizzle over the lime, caper and coriander dressing. Sprinkle with some chopped coriander and serve immediately while the halloumi cheese is warm.
