Seafood rice with chilli fried octopus

Ingredients
- 500g octopus
- 1 red chilli
- 1 tsp lemon zest
- 1 tsp chopped parsley
- 150g short grain rice (Ellebi)
- 6 king prawns,
- 10 black mussles
- 8 clams,
- 1 small squid,
- 1 onion,
- 2 cloves garlic
- 30g raisins
- 1 tsp turmeric
- 1 tsp paprika
- ¼ chopped chilli
- 1 cinnamon stick
- 1 tbsp chopped coriander
- 1 tbsp chopped mint
- 3 cups fish stock
- 2 star anise
Method
On medium heat saute the crushed stara nise, crushed cinnamon, paprika, turmeric with the chopped onion, garlic and chilli. Add the peeled washed seafood, stir well than add the rice, stirring consistently, pour in the stock and, cover and simmer until rice is cooked through. Finally add the herbs, stir and remove from heat. Meanwhile , clean , cut the octopus and boil until softened, than saute in olive oil, chopped chilly, lemon zest and sprinkle with parsley

- 2 star anise
