Carnival rainbow cake

Ingredients
For the cake
- 350g self raising flour (St Georges Brand)
- 3tsp baking powder
- 350g softened unsalted butter (President)
- 350g caster or light brown caster sugar
- 6 large eggs
- 1 tbsp vanilla
- 40ml milk
You will also need
- 200g butter, soft
- 200g cream cheese, at room temperature
- 500g icing sugar, sifted
- Sweets and sprinkles to decorate (Tesco)
Method
Start this recipe by brushing 6 disposable round foil tins with a little melted butter. Cream together the butter, sugar and vanilla until light and fluffy. Then, add eggs one at a time followed by a little of the flour and mix well, before adding remaining flourand baking powder. If the mixture is a little too stiff, add in the milk. Next, divide your mix into 6 bowls and mix in the different colours. Divide the colours into the prepared tins and smooth out. Pop them into the oven at 170`c and bake for approximately 20 minutes, taking them out as soon as a skewer to the centre came out clean. When your cakes are cool, preferably wrap them in clingfilm and pop them into the fridge for a day. When ready, mix together the the butter and icing sugar till light and uff, then stir in the cream cheese. Use to sandwich the cakes together and decorate with sweets and sprinkles.

Int teħtieġ ukoll

- 200g ġobon kremuż
- 600g zokkor fin marbul
- ħelu u ‘sprinkles’ biex iżżejnu
Method
Ibda din ir-riċetta billi tiksi 6 laned tal-fojl tondi bi ftit butir imdewweb. Ħawwad flimkien il-butir, zokkor u vanilla sakemm ikun ħafif. Imbagħad, żid il-bajd waħda waħda segwit bi ftit mid-dqiq u ħawwad sew, imbagħad żid id-dqiq li fadal u baking powder. Jekk it-taħlita tkun ftit iebsa, żid il-ħalib. Sussegwentement, aqsam it-taħlita tiegħek f’6 skutelli u ħawwad bil-kuluri differenti. Aqsam il-kuluri fil-laned ippreparati. Poġġihom ġol-forn f’temperatura ta ‘170`Ċ u aħmi għal madwar 20 minuta, jew sakemm l-iskewer joħroġ nadif min-nofs. Meta l-kejkijiet jibirdu, preferibbilment tagħlaqhom fi clingfilm u tpoġġihom fil-friġġ għal ġurnata. Meta jkunu lesti, ħawwad flimkien il-butir u z-zokkor fin, imbagħad ħawwad il-ġobon kremuż. Uża l-krema bejn il-kejkijiet u poġġi flimkien. Fl-aħħar iddekora bil-ħelu u sprinkles.
