Marinated beef salad with lime and thyme yogurt

Ingredients
- 500g beef fillet
- 1 packet BBQ marinade sauce (Santa Maria)
- 3 mushrooms
- 1 red pepper
- 1 leek
- Bunch spinach leaves
- 3 tbsp yogurt (Benna)
- 1 lime
- 50g Parmesan
- 1 tsp thyme leaves
- 1 tsp chopped chilli
Method
Slice the mushrooms and leeks, chop the chilly sauté and toss in a bowl with the spinach leaves, thyme, yogurt and sliced Parmesan. Zest the lime, squeeze in the juice and leave in the fridge. Meanwhile mix well the beef in the marinade and grill on the well pre heated griddle pan until medium rare, place on a chopping board slice and mix in the salad, toss and serve.
