Rubbed fillet of pork on a chilli and spring onion beer pilaff rice

Ingredients

For the pork

  • 1 whole pork fillet
  • 1 tbsp cumin
  • 1 tbsp paprika sweet
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp mixed spice
  • 2 tbsp honey
  • 2 tbsp soy sauce

You will also need

  • 1 cup long grain rice (Chef Way)
  • 2 spring onions
  • 1 red chilli
  • 3 cloves garlic
  • 1 celery stick
  • small bunch coriander
  • 2 cups dark beer (Farsons)
  • 1 tbsp mixed spice
  • 1 tsp mild curry

Method

For the pork, mix the dry ingredients together and rub well the Pork than mix the wet ingredients and brush also the fillet with. allow overnight in the fridge and than grill on a well pre heated griddle pan and finish in the oven until cooked through. Next prepare the rice. Chop the onion garlic, celery and sauté in butter with the spices until softened, add the rice and stir continuously. Pour in the beer allow to bring to the boil, turn into an oven ceramic bowl cover and finish in the oven at 180`c until all the liquid is absorbed. keep stirring regularly during cooking time and add the chopped coriander once cooked through.
