Maltese pumpkin pie

Serves: 6-8

Ingredients

  • 500g puff pastry
  • 200g cooked long grain rice (Chef-way)
  • 400g diced pumpkin
  • 1 large onion, finely chopped
  • 2 garlic cloves, peeled and crushed
  • 6 anchovy fillets
  • 1 large can of tuna
  • 2 tbsp capers
  • 100g pitted black olives
  • Chopped mint, marjoram, thyme, oregano and parsley
  • 100g roasted hazelnuts
  • 50g sultanas
  • Extra virgin olive oil (Borges)
  • 1 beaten egg
  • Sesame seeds
  • Fresh seasoning

Method

Cook the onion and garlic in the extra virgin olive oil over a moderate heat. Add in the pumpkin, anchovies and herbs and cook for further 10 minutes. Remove from the heat, add in the drained tuna, capers, olives, hazelnuts, sultanas and the cooked rice. Taste and adjust seasoning. Line a greased pie dish with just over half of the puff pastry and fill with the pumpkin filling. Cover with the remaining pastry, brush with the egg, sprinkle with the sesame seeds. Bake in a hot oven for 35 minutes until golden brown.

  • 2 sinniet tewm, imqaxxar u mgħaffeġ
  • 6 fletti tal-inċova
  • Landa tonn taż-żejt kbira
  • 2 mgħaref kappar
  • 100g żebbuġ iswed mingħajr għadma
  • nagħniegħ, marjoram, sagħtar, origanu u tursin imqatta’
  • 100g ġellewż inkaljat
  • 50g sultana
  • żejt taż-żebbuġa ‘extra virgin’
  • bajda imħabbta
  • żerriegħa tal-ġulġlien
  • ħwawar frisk
