Festive chocolate mousse with alcohol soaked prunes and apricots

Ingredients

For the fruit

  • 100g dried apricots, quartered
  • 100g dried ready to eat prunes, quartered
  • Juice of an orange
  • 1 tot whisky

For the mousses

  • 200g dark chocolate, chopped
  • 2 tbsp double cream
  • 2 eggs, separated
  • 2 tbsp caster sugar
  • You will also need chocolate shavings for serving

Method

Start this recipe by preparing the fruit the night before. Soak the fruit in the orange juice and whisky, cover and allow to soak. The next day prepare the mouse. Melt the chocolate then mix in the cream. Whisk the egg whites till fluffy, followed by the sugar. Mix in the egg yolks to the chocolate mixture, then fold in meringue immediately till you have a thick chocolate mousse. Next, spoon the soaked fruit into 6 serving glasses and top with the rich chocolate mousse. Allow to set in the fridge for 2 hours before serving with chocolate shavings on top.
