Red bream fillet with an octopus and mango salad.

Ingredients
- 4 Red bream fillets
- 500g octopus
- 1 mango
- 1 tbsp chopped chives
- 1 red chilli
- 1 tbsp lemon zest
- 6 lemon segments
- 1 celery stick
- Flaked almonds
- 1 small bunch coriander
- Bunch rocket leaves
- 1 large potato
Method
Boil the octopus until cooked through and in a bowl mix with the chopped chilly, lemon zest, lemon segments, sliced celery, almonds, diced mango and almonds. Pan fry the fish fillets and finish under the grill, grate the potatoes season form 2 flat patties and shallow fry to serve underneath the fish. mix the rocket with the salad just before serving and serve on the side of the fish.
