Banana and strawberry yogurt lollypops

Ingredients

  • 300g Greek yogurt (Mevgal)
  • 1 tsp honey
  • 1 ripe banana
  • Drop lemon juice
  • 350g berries (raspberries or strawberries)
  • 2 tbsp caster sugar
  • 4 tbsp granola
  • You will also need lollypop moulds

Method

Start this recipe by hulling the strawberries and place into a saucepan with the 2 tbsp sugar and cook down together for 5-10 minutes. Remove off the heat and allow to cool. Meanwhile, place the banana, Greek yogurt, lemon juice and honey into a food processor and blitz till smooth. To put the pops together, place a tablespoonful of the banana mixture into each mould. Spoon over a little of the granola, followed by a spoonful of the cooked strawberries. Repeat the process until you fill the mould. At this point you may also swirl the colours together using a wooden skewer. Place in the lollypop stick and place in the freezer for 6 hours to set.
