Zucchini and Parmesan waffles with cream cheese, chicken and crispy Parma ham
Serves: 3
Ingredients
For the zucchini waffles
- 115g plain flour (Lamb Brand)
- 1 tsp baking powder
- ½ tsp salt
- 150ml milk
- 1 large egg
- 60g melted butter
- 1 small zucchini, grated
- 2 tbsp grated Parmesan
- Salt and pepper
You will also need
- 1 cooked chicken breast, shredded
- 2 spring onions, finely sliced
- 200g herbed cream cheese
- Salt and pepper
- 4 slices Parma ham
- Drizzle of honey
Method
Start this recipe by placing the Parma ham onto a baking tray, drizzle over the honey and place under a grill to crisp. Next,make the waffles. make the batter by mixing together all the ingredients in a bowl with a whisk then leave to sit for 4 minutes. Now, heat up your waffle pan. When hot, spoon in the waffle mixture and cook according to the instructions ( 4 minutes approx) Whilst the waffles are cooking, make the filling by mixing together the cream cheese, chicken, spring onions and season with salt and pepper. Place the waffles onto 3 serving plates whilst still hot, spoon the chicken filling onto the middle and lay 2 slices of crispy Parma ham on top of each. Drizzle with a litle honey and serve.
