Whole meal spaghetti ‘puttanesca’ with swordfish

Ingredients

  • 2 portions swordfish steaks
  • Zest and juice 1 lemon and 1 orange
  • Good pinch dried chilli flakes
  • 1 heaped tbsp sun-dried tomato paste
  • 3 tbsp extra virgin olive oil (Borges)
  • 1 small tin anchovy fillets
  • 2 garlic cloves, finely chopped
  • 3 large tomatoes, blanched, peeled and chopped
  • 2 tbsp pitted kalamata olives (Camel)
  • 1 tbsp capers (Camel)
  • Salt and pepper to taste
  • 200g whole meal spaghetti (Good Earth)
  • Few fresh basil leaves

Method

Remove skin and bone off the swordfish and dice the flesh. In a medium bowl, mix together the zest and juices, chili flakes, sun-dried tomato paste. Add in the sword fish and extra virgin olive oil and mix together well. Allow to marinate for 1 hour. Meanwhile, prepare the Puttanesca sauce. Heat a large pan with 1 tbsp. extra virgin olive oil and cook together the anchovies, garlic and chili flakes to taste. Next stir in the fresh tomato, olives and capers and season with salt and pepper. Cook on a low simmer for 8-10 minutes or until the sauce slightly thickens. Meanwhile, pan-fry the marinated sword fish in a pan for 3-5 minutes and also cook the paste in a large pan of salted boiling water then drain and mix into the Puttanesca sauce. Serve the cooked pasta immediately into plates with the swordfish and a few basil leaves to decorate.

  • 2 sinniet tewm
  • fletti tal-inċova
  • 3 tadamiet kbar
  • mgħarfa kappar
  • 2 imgħaref żebbuġ kalamata bl-għadma
  • ħabaq frisk

Method

Neħħi l-ġilda u l-għadam mill-pixxispad u qatta’ l-laħam. Fi skutella medja, ħawwad flimkien il-qoxra u l-meraq tal-lumija u l-larinġa, il-frak tal-bżar pikkanti, u l-pejst tat-tadam imqadded. Żid il-pixxispad u ż-żejt taż-żebbuġa u ħawwad flimkien sew. Ħallih jimmarina għal siegħa. Sadanittant, ipprepara z-zalza puttanesca billi ssaħħan taġen kbir b’imagħrfa żejt taż-żebbuġa u sajjar flimkien l-inċova, it-tewm u l-frak tal-bżar aħmar. Imbagħad żid u ħawwad it-tadam frisk, iż-żebbuġ u l-kappar u ħawwar bil-melħ u l-bżar. Sajjar u ħallih itektek fuq nar baxx għal 8-10 minuti jew sakemm iz-zalza tiħxien ftit.
