White Fruit cake

Ingredients

  • 250g margarine (Stork)
  • 250g caster sugar
  • 4 eggs
  • Juice of an orange
  • Zest of lemon and orange
  • 1 tsp vanilla extract
  • 500g mixed dried fruit (sultanas, raisins, currants, candied peel, glace cherries)
  • 375g plain flour
  • 12g baking powder
  • Pinch salt
  • 1 teaspoon mixed round cinnamon, nutmeg and cloves
  • 125ml milk
  • 100g blanched almonds

Method

In a large bowl, beat margarine and sugar till pale and fluffy. Beat in the eggs one at a time, followed by the orange juice, zest and vanilla. Next mix in the fruit then sieve in the flour, baking powder, salt, spices and fold in. Finally fold in the milk and spoon the mixture into a greased and lined 8 inch cake tin. Decorate the top with the blanched almonds. Bake in the oven at 160`c for approximately 45 minutes or until a skewer inserted into the centre of the cake comes out clean. Remove from the oven and allow to cool down in the cake tin before removing.

  • qoxra ta’ lumija u ta’ larinġa
  • essenza tal-vanilja
  • 125ml ħalib
  • 500g frott imnixxef imħallat (sultana, żbib, passolina, konfettura u ċirasa)
  • 375g dqiq plain
  • 12g trab tal-ħami
  • kuċċarina kannella mitħuna mħallta, noċemuskata u msiemer tal-qronfol
  • lewż mismut (blanched)

Method

Fi skutella kbira, ħabbat il-marġerina u z-zokkor flimkien. Ħabbat il-bajd waħda waħda, segwit mill-meraq tal-larinġa flimkien mal-qoxra u l-vanilja. Imbagħad żid il-frott u għarbel id-dqiq, it-trab tal-ħami, il-melħ, il-ħwawar u żid. Fl-aħħarnett żid il-ħalib u poġġi t-taħlita ġo landa tal-kejk ta’ 8 pulzieri midluka bix-xaħam. Żejjen il-parti ta’ fuq bil-lewż mismut. Sajjar fil-forn f’temperatura ta’ 160°C għal madwar 45 minuta jew sakemm l-iskewer imdaħħal fiċ-ċentru tal-kejk joħroġ nadif. Neħħi mill-forn u ħallih jiksaħ fil-landa tal-kejk.
