Wheat salad with feta and hummus stuffed chicken

Ingredients

For the chicken
  • 2 chicken breasts, flattened
  • 2 heaped tbsp hummus (Camel Brand)
  • 50g crumbled feta cheese
  • 4 slices Parma ham
  • Salt and pepper to season
For the salad
  • 150g cooked emmer wheat or faro (Tesco)
  • Fresh chopped coriander and parsley leaves
  • 1 tsp ground cumin
  • 1 tbsp extra virgin olive oil (Borges)
  • 10 cherry tomatoes, halved
  • 2 tbsp sliced Kalamata olives (Tesco)
  • 1 handful baby spinach leaves
  • 1 tbsp chopped toasted pistachios
  • Salt and pepper

Method

Start this recipe by laying out the 2 flattened chicken breasts and season with salt and pepper. Spread over the hummus, then cover with the crumbled feta. Roll up, then wrap around 2 slices Parma ham on each chick breast. Place onto a baking tray and bake at 200`c for 10-12 minutes. Meanwhile, mix all the salad ingredients together and put aside. When the chicken is cooked, allow to sit for 5 minutes before serving sliced on top of the wheat salad.
