Warm lamb and noodle salad
Serves: 2
Ingredients
- 400g tender lamb strips for stir fry
- Fresh ginger
- Blanched mixed vegetables, asparagus, bell peppers and snow peas
- 2 tbsp soy sauce
- 1 tsp sesame oil
- 1 tsp sugar
- 2 limes
- Spring onions
- Cashew nuts
- Fresh coriander
- Vegetable oil
- 2 cloves garlic
- Corn flour
Method
Quick fry a teaspoon of fresh grated ginger together with the garlic. Stir in the lamb strips and stir fry quickly adding some more oil if needed. Season with salt, pepper, sugar, the juice of 1 lime, sesame oil and soy sauce. Add some stock if mixture is too dry and adjust consistency with corn flour. Mix in the vegetables, spring onions and coriander. Drain the noodles from their water and stir in the lamb stir fry. Serve while still warm with lime wedges, more coriander and the cashews.
