Waldorf salad with grilled chicken

Ingredients

  • 2 chicken breasts
  • 70g walnut halves
  • 2 sticks celery, chopped
  • 1 granny smith apple, cut into thick slices
  • 2 spring onions, sliced diagonally
  • 70g black seedless grapes, halved
  • Mixed salad leaves

For the dressing

  • 3 tbsp mayonnaise (HELMANN’S)
  • Juice of ½ lemon
  • 1 clove garlic
  • 2 tbsp olive oil
  • Fresh seasoning
 

Method

Start the recipe by seasoning the chicken with salt and pepper and cook in a griddle pan with some olive oil for about 10 minutes, till golden brown. Remove the chicken from the pan and slice up diagonally. Put the chicken to one side. Next, make the dressing by blitzing the ingredients together for a few seconds in a processor. Pour the dressing into a bowl and leave to chill in the fridge. Finally, put all the remaining ingredients for the salad in a large bowl , including the roasted sliced chicken and the prepared dressing. Place all the ingredients together, and didide between 2 large salad plates. Season well with fresh pepper and salt and serve immediately.

  • 70g ġewż maqsum min-nofs
  • 2 zkuk tal-karfus imqattgħa
  • 1 tuffieħa ħadra mqattgħa f’biċċiet ħoxnin
  • 2 spring onions, imqattgħa dijagonali
  • 70g għeneb iswed maqsum min-nofs u mingħajr żerriegħa
  • weraq imħallat tal-insalata

Għat-taħlita tal-wiċċ

  • 3 mgħaref mayonnaise (HELMANN’S)
  • il-meraq ta’ ½ lumija
  • 1 sinna tewm
  • 2 mgħaref żejt taż-żebbuġa
  • ħwawar friski

Method

Ibda r-riċetta billi tħawwar l-isdra tat-tiġieġa u ixwihom f’taġen bil-grilja bi ftit żejt taż-żebbuġa għal 10 minuti sakemm jiħmaru. Neħħihom mit-taġen u ħallihom jiksħu. Qattagħhom f’roti dijagonali u qegħedhom f’ġenb. Imbagħad agħmel it-taħlita tal-wiċċ billi tħabbat l-ingredjenti flimkien għal ftit sekondi. Ħalli t-taħlita tiksaħ. Ixħet l-ingredjenti li jkun fadal għall-insalata fi skutella kbira mal-biċċet tat-tiġieġ. Ħawwad it-taħlita tal-wiċċ li tkun ippreparajt. Poġġi l-insalata f’żewġ platti kbar u ħawwarha bil-bżar u l-melħ qabel isservi.
