Thai battered sesame bananas

Serves: 4

Ingredients

  • 4 bananas, peeled and quartered
  • 250g plain flour
  • 1 tsp baking powder
  • 100g desiccated coconut, soaked in water for 1 hour then squeezed
  • 1 tbsp sugar
  • Pinch salt
  • 2 tbsp sesame seeds
  • 1 egg, beaten
  • Water to bind
  • Vegetable oil for frying

Method

Start this recipe by mixing the batter. Mix all the ingredients together then bind with a little water to make a batter. Allow the batter to sit for 15-20 minutes as it will thicken. When ready, heat up your oil in a large pan to a medium heat. Dip the bananas into the batter and carefully place into the oil. Move around in the oil continuously until golden brown all over. Remove with a slotted spoon and allow to drip on a wire rack for 2 minutes before serving.
