Sweet and sour gluten-free spring rolls

Ingredients
- 1 leek, sliced julienne
- 2 tbsp. sesame oil
- 1 carrot, shredded
- 10 rice wraps
- 8 prawns, chopped
- 12 mange tout, sliced julienne
- 5 tbsp. sweet and sour sauce with peppers (Thomy)
- 1 tbsp. mirin

Method
Sauté the leeks, carrots and mange tout for 1 minute on high heat then add the prawns. Season well with salt and pepper and remove off the heat.
In a bowl mix the prawn mixture with the sweet and sour sauce and allow to cool down. Pour a glass of water and the mirin into a plate and soak the wraps for 1 minute. Spoon the filling mixture onto the middle and roll up into a spring roll. Allow to rest in the fridge before serving either cold, reheated in the oven or deep fried.
