Supreme of chicken with a pomegranate and grape fruit reduction, garlic sauté potatoes.

Serves: 2

Ingredients

  • 2 chicken supreme
  • 3 tbsp pomegranate
  • 6 roughly chopped grapefruit segments
  • 1/2 glass Marsala wine
  • Bunch kale
  • 1/2 red onion
  • 2 medium sized potato
  • 3 cloves garlic

Method

On a well preheated sauté pan seal well the chicken from all sides, remove from the pan add a knob of salted butter and add pomegranate and grapefruit, pour in the wine and reduce by half. Slice the onion and sauté in butter until browned add the kale and toss season and remove from heat. Wash the potatoes well and slice, chop the garlic and saute together in butter on low heat until potatoes are browned.
