Savoury zucchini scones

Ingredients

  • 400g plain flour (Lamb brand)
  • ½ tsp salt
  • 1 tbsp baking powder
  • ½ tsp bicarbonate of soda
  • 1 tsp sugar (Lamb brand)
  • 60g light vegetable spread (Flora)
  • 200ml soy milk (Natrue)
  • 75g vegan cheddar cheese, grated
  • 1 zucchini, grated

Method

Rub together the flour, salt, baking powder and soda, sugar and margarine with your fingertips in a large mixing bowl. Carefully bind with the soya milk. Incorporate the cheddar and zucchini taking care not to over mix the scones.

Place on a baking tray and press into a large disc. Cut into wedges and bake at 180֯c until scones are crunchy and golden on the outside. Best served freshly baked with extra margarine to spread.
