Spicy prickly pear fries

Ingredients
- 1 large or 2 smaller prickly pear pads
- 3 tbsp. corn flour (Lamb brand)
- 75g plain flour (Lamb brand)
- 25g corn flour
- 1 packet taco seasoning (Santa Maria)
- 1 heaped tbsp. smoked paprika
- 1 tsp baking powder
- Salt and pepper
- 1 egg (Le Naturelle)
- 300ml milk
- Vegetable oil for frying
- 1 jar hot chunky salsa (Santa Maria)
- 1 jar single cream (Elmlea)
- Juice ½ lemon
- Lime wedges for serving
Method
Start by soaking the cactus pads overnight in water, then carefully remove all the thorns. Blanche for 2 minutes in a pan of salted boiling water. Allow to cool down and cut into 2cm strips. To make the batter, mix together the flour, baking powder, taco seasoning, smoked paprika and season well with salt and pepper. Crack in the egg, slowly stir in the milk until you have a smooth batter. Rest for 20 minutes before dipping in the cactus strips and deep frying till golden brown. Drain on kitchen paper before serving hot or cold with salsa and sour cream.
