Spicy buffalo wings with coriander dip
Serves: 16
Ingredients
- 4 tbsp honey
- 4 tbsp fish sauce
- 1 green and 1 red chilli, finely chopped
- 1 inch piece ginger, finely chopped
- 1 tbsp paprika
- 2 tbsp Worcestershire sauce
- 1 tsp cinnamon
- Juice 2 limes
- 1 1/2kg chicken wings, boiled
For the dip
- 4 tbsp mayonnaise (Hellmans olive oil)
- 3 cloves garlic, crushed
- Juice of a lime
- 2 tbsp chopped fresh coriander
- 1 green chilli, sliced
Method
Mix all the marinating ingredients together in a large bowl and mix in the boiled chicken wings, coating all over in the juices. Allow to sit for 1 hour. When the wings are ready to cook, arrange onto a baking tray in one layer only and bake in the oven at 200`c for approximately 30 minutes until golden brown and crispy. Meanwhile, make the dipping sauce by mixing all the ingredients together.
