Spiced Cajun and lemon chicken with herbed basmati and yogurt

Ingredients

For the chicken

  • 6 boneless and skinless chicken thighs
  • 2 tsp Cajun spice
  • 1 tsp smoked paprika
  • 1 red chilli, finely chopped
  • 1 tbsp chopped fresh coriander and dill
  • Zest 1 lemon
  • 1 tbsp olive oil
  • Salt and pepper to taste

You will also need

  • 3 tbsp whole black olive (FOS)
  • 1 red pepper, cut into strips
  • 1 block feta cheese (Fior di Vita)
  • 1 tbsp corn flour
  • Salt and pepper to taste
  • 100g basmati rice
  • Lemon wedges and extra fresh herbs for serving
  • 150g Greek yogurt (Kolios)

Method

Start this recipe by mixing together the cajun spice, smoked paprika, lemon zest and fresh herbs. Rub the oil over the chicken followed by the spice mix, coating all over and allow to marinate for 30 minutes. When ready, fry the chicken and red pepper strips to seal in a large pan and then place into an oven dish along with the olives and cook for 15 minutes. Meanwhile, cook the basmati rice in water to cook. Finally, cut the feta in half and coat with the corn flour. Fry in a hot pan with a little oil till brown and crispy. To serve, spoon the rice onto a large plate and lay over the chicken, peppers and olive, spooning over any pan juices. Lay over the fried feta, top with lots of fresh herbs and serve with lemon wedges and garlic on the side. Serve with the Greek yogurt on the side in a bowl.
