Spaghetti with garlic snails and tomato chunks

Serves: 2

Ingredients

  • 300g spaghetti
  • 30 snails boiled in vegetable stock
  • 1 red onion
  • 3 cloves garlic
  • 1 tsp cumin
  • 1 tsp curry powder
  • 1 tsp mixed spice
  • 2 tsp paprika
  • 1/4 fresh chilli
  • 1 tbsp chopped parsley
  • 1/2 glass red wine
  • 6 quartered cherry tomatoes
  • 1/2 glass tomato pulp
 

Method

Chop the onion, garlic and chilli and in olive oil simmer until softened, add all the spices and stir well. Remove the snail shells and toss them in the pan than pour in the wine, simmer by half, add pulp and continue simmering. Boil pasta al dente and toss it for a few minutes in the sauce, sprinkle the parsley and season.
