Spaghetti carbonara

Ingredients

  • 50g pancetta
  • 100ml chicken stock
  • 30g Pecorino cheese
  • 10g butter
  • 100g spaghetti
  • Cracked pepper
  • Chopped parsley
  • 2 egg yolks
  • Sparkling water

Method

Start by cooking the pasta in boiling water. Pan fry the pancetta, when cooked add the chicken stock. In a separate bowl, mix the egg yolks, sparkling water, pecorino cheese and cracked pepper. When the pasta is nearly cooked, drain it and add it to the pan with the pancetta and stock. Take off the heat, add the egg mixture, stir and serve.
