Spaghetti Aglio e olio with burrata and prosciutto

Ingredients
- 3 tbsp. extra virgin olive oil (Olitalia)
- 2 red chilies, deseeded and finely chopped
- 2 cloves garlic, finely chopped
- ½ tbsp. finely chopped parsley
- 200g spaghetti (Pasta Reggia)
- 2 fresh burrata (Galbani)
- 4 slices fresh prosciutto
- Few fresh basil leaves to decorate
Method
Start this recipe by cooking the spaghetti in a pan of salted boiling water. Meanwhile, heat the oil in a large pan and gently fry together the garlic and chili for a few minutes. Drain the spaghetti and add to the pan, along with a small drizzle of the cooking water and toss around to soak well. Mix in the parsley and freshly ground salt and serve into 2 bowls. Place the burrata on one side along with 2 slices of prosciutto. Decorate with fresh basil leaves and a drizzle of olive oil and serve immediately.
