Southern-fried chicken
Ingredients
- I whole chicken
- 500ml milk (Benna)
- 1 cup plain flour (Lamb Brand)
- 1 cup breadcrumbs
- 1 cup crackers, crushed (Mizura)
- 2 tsp paprika
- 1 tsp salt
- 1 tsp garlic powder
- ½ a tsp cayenne pepper
- Oil for deep frying
Method
Cut the chicken into 10 pieces, legs, thighs, wings and breast into 2 pieces. Combine the flour, bread crumbs, cracker crumbs, paprika, salt, garlic powder and cayenne pepper. Soak the chicken pieces in the milk for at least 30 minutes at room temperature. Combine the flour, breadcrumbs, crumbed crackers, paprika, salt, garlic powder and cayenne pepper in a bowl. Dip the chicken pieces into the crumb mixture and coat well. Heat up the oil to a moderate temperature and start frying the chicken pieces into small batches taking care that the temperature of the oil doesn’t go too high as this will burn the coating, leaving the chicken raw in the centre. Remove the chicken from the oil and drain on kitchen paper. Serve immediately whilst still warm.
