Smoked salmon, avocado pesto & burrata deep pan pizza

Ingredients

  • 500g Pizza dough
  • 1 large ripe avocado
  • 1/2 packet frozen avocado pulp
  • Handful basil leaves
  • 4 spoons pistachios
  • Juice of ½ a lemon
  • 2 garlic cloves
  • Extra virgin olive oil
  • 3 spoons grated parmesan cheese
  • Smoked salmon slices
  • Shredded mozzarella
  • Burrata (Zanetti)
  • 1 red onion finely sliced
  • Extra pistachios and basil leaves for garnish
  • Rocket leaves

Method

Grease a pizza pan with extra virgin olive oil, flatten the pizza dough to cover the bottom of the pan. 

Whizz the defrosted, frozen avocado pulp together with the garlic, parmesan, basil, pistachios and enough extra virgin olive oil into s smooth pesto. Spread over the pizza dough.

Sprinkle with the shredded mozzarella, dot with smoked salmon slivers and onion slices. Break over the burrata. Allow proving, bake at 175°C till pizza rim is golden and mozzarella is melted. 

Garnish your pizza with avocado slices, pistachio slices, basil & rocket leaves.
