Shot glass falafel on stick in feta cream

Ingredients
- 100ml cooking cream (Cucina d’oro)
- 40g feta cheese, crumbled (Fior di Vita)
- 1 tsp lime zest
- 1 tbsp. ginger mince
- 1 tbsp. garlic mince
- 2 shallots chopped
- 1 tsp cumin ground
- 100g tinned chickpeas, drained (Fiamma)
- 50g flour (Lamb brand)
- 2 tbsp. coriander, chopped
- 8 fancy kebab sticks
- 8 shot glasses
Method
Warm up the cream in a saucepan, add in the feta and melt down. Add in the zest, season with salt and pepper and remove off the heat. Sauté the shallots, garlic, ginger and cumin with a little olive oil. Place into the bowl of a food processor, along with the chickpeas, coriander and half of the flour. Season with salt and pepper and blitz to a paste. Form into mini falafel balls and bake or fry. Thread individually onto small skewers. half fill the shot glasses with the feta cream and serve with the falafel on stick into the glass.
