Savoury waffles with salmon, avocado and poached eggs

Ingredients

For the waffles

  • 120g plain flour (Lamb brand)
  • 70g semolina or polenta
  • 25g corn flour (Lamb brand)
  • 1 tsp baking powder
  • ½ tsp bicarbonate of soda
  • Salt and pepper to season
  • 480g buttermilk (Schardinger)
  • 2 eggs (Le Naturelle)
  • 50g melted butter (Valio)
  • 2 spring onions, finely chopped
  • 50g shredded Cheddar cheese (Fior di Vita)

For the toppings

  • 150g sliced smoked salmon
  • 1 avocado, peeled and sliced
  • 2 eggs (Le Naturelle)
  • 3 tbsp. cream cheese (Milk)
  • 1 lemon
  • 1 tsp chopped capers (Vitaly)
  • 1 tbsp. fresh dill plus extra to garnish

Method

To make the waffles, beat together all the ingredients (except the butter, spring onions and Cheddar) to a smooth batter, then mix in the remaining ingredients. Allow to sit from 5-10 minutes then spoon the mixture into a hot waffles maker and cook for 3-4 minutes. When ready, remove and place onto 2 serving plates. Meanwhile, poach the 2 eggs. Mix the cream cheese with 1 tsp lemon zest, 1 tbsp. chopped dill and the chopped capers and spread onto the waffles. Arrange the smoked salmon and avocado on top, followed by the poached eggs and decorate with extra dill.
