Salmon kebabs with rosemary and trio of rice

Serves:

Ingredients

  • 1 fresh salmon fillet (250g)
  • 50g rice, 3 types
  • Zest of an orange
  • Fresh rosemary, chopped
  • 1 lemon
  • 250ml fish stock

 

Method

Cut salmon fillets in dice shape (approx 1.5 cm by 1.5 cm)and place in a kebab stick. Squeeze the lemon juice and mix with the rosemary. Use to marinate the salmon. Pre-heat a pan and grill the salmon for 4 minutes on each side. Whilst cooking, sprinkle the orange zest on top of the salmon. Cook the trio of rice in boiling fish stock until cooked and serve with the salmon kebabs.
