Peppered goats` cheese lasagna with chicory

Ingredients
- 1 peppered goats` cheese
- 1 tomato
- 1 aubergine
- 50ml tomato sauce
- 1 chicory
- Fresh seasoning
- Olive oil
- Fresh herbs
Method
Cut round slices of tomato and aubergine .Pre-heat a grill pan and grill the aubergine on both sides with a sprinkle of olive oil .Place layers of aubergine slices, tomato and goats` cheese on top of each other to form a lasagna . Spread the tomato sauce on top and bake for 15 minutes in the oven. Cut the chicory in four pieces length wise and sprinkle with olive oil, salt and pepper bake for 10 minutes. Serve the lasagna with the chicory.
